The problem with the Bible and the faiths that believe in it is that those folks have pushed that crap onto everybody, including the billions who do not believe as they do. Even worse, those beliefs have, demonstrably, harmed humanity in many ways, and continue to do so today. THAT is why most atheists make sure they strive hard to combat that stupidity. If the ignorance spread by religion didn't impact us directly and indirectly, we would just laugh and ignore it.

They are talking about the founding patriarch of this new religion, and the establishment of a spiritual foundation on earth centered on the spirit of the "One God" that the patriarch was meeting and communing with in his mind. The folks likely called that patriarch "God", too, because he was seen as channeling something very high, something that gave spiritual life to folks, the "spirit of God". Its strictly religious stuff and has nothing to do with the literal creation of the Universe or something.

One thing that is important to remember is the purpose for which the Epistles were written. They were letters to the new and growing churches containing teachings on how to live/love/etc., not documents created to verify Jesus' existence. The Epistles were written for people who already had accepted Jesus as Messiah, and so it would have been unnecessary and redundant to try to convince the Christians that Jesus is God, see? There were other documents with a focus on Jesus as you so desired, and they are called the Gospels.
